With a pale yellow colour, this wine expresses itself intensely on white flowers with a hint of citrus. The palate combines suppleness, fullness and finesse with notes of blackcurrant bud. The finish is fresh and minty. It is served between meals or as an aperitif and goes hand in hand with asparagus and seafood, not to mention the goat’s cheese from Selles sur cher.
Alcohol content : 13.5% vol
Terroir: Flint clay
Grape varieties: 100% Sauvignon.
Serving temperature: 8 to 10 °C
Ageing potential: drink within 2 years
Harvesting by machine equipped with a destemmer
Direct pressing with a pneumatic press and settling of the must in the cold at 6°C.Alcoholic fermentation at low temperature (17°C) for up to 15 days,
then racking and cold storage to promote tartaric precipitation.
Filtration on a tangential filter and then storage in tanks.
Ageing in stainless steel and fiberglass vats.
Filtration on 0.65μm membranes before bottling.
