2020 marks the 6th vintage of the red pet nat! Fermented 100% whole cluster and semi-carbonic, this wine is pressed early, with residual sugar remaining, then bottled to capture carbon dioxide from the last of the fermentation until it is fully dry.
This co-ferment is one of the funkier pet-nats we have made. The savory aromas of alfalfa, hay and shiitake mushroom are balanced fresh berries, candied cherries and dried citrus. The light tannin extraction adds a slightly pithiness, which coupled with the lively bubbles creates a dynamic mouthfeel.
