A beautiful copper color in your glass after 18 days of skin contact. Quite an aromatic nose with apples, grapefruit and a sweet hint of honey. On the palate you’ll sense lemon pith, apples, and other orchard fruits. A dried orange peel note lingers on the finish. Mineral driven and totally refreshing. Bottled unfiltered. Limited production.

Matija ZÌŒerjav a. k. a. Matic is the third generation of winemakers, and was only 24 when he took over the management of his family vineyards and winery. In the predominantly white wine region of SÌŒtajerska (lower Styria), close to the borders with Austria and Hungary, Matic cultivates 9 hectares of vineyards using organic and biodynamic methods. Matic does not use any additives in the vineyard or cellar. His wines are all wild yeast fermented and bottled with minimal sulfites, and some with zero added sulfites. Matic prefers skin contact maceration and loves to experiment with various fermentation vessels, clay amfora, cement eggs, and traditional neutral barrels. Matic is a master in production of bottle fermented method ancestral aka pet-nat.
